Recorder: Sony PCM-M10
Microphone: Simple to make, binaural electret microphone which works great for around $10 in parts! I enclosed these with felt (not shown) for some wind protection.
Headphones: Sony MDR-7506
I highly recommend these for field recording, but you can get by with less if you're just starting out. Over-the-ear style are preferred to better isolate outside noise. Look for headphones that have a fairly flat frequency response. If you'll be doing a lot of field recording, don't skimp on your headphones!
Editing Software: Give Audacity a try. It's a free download for both Mac and PC.
